Baked Shrimp Scampi

2 lb shrimp, peeled and deveined
3 tbsp chopped parsley
6 tbsp melted butter
3 tbsp white wine
1 lemon, squeezed
1 shallot, minced
1/2 tsp crushed red pepper flakes
1/4 tsp kosher salt
1/2 cup panko breadcrumbs
2 tbsp olive oil
1/3 cup Parmesan cheese
1 tsp fresh rosemary, chopped
3 cloves garlic, minced

Preheat the oven to 375°F (190°C).

In a large skillet, melt the butter over medium heat.

Add the minced garlic and shallot, and sauté until fragrant.

Pour in the white wine and lemon juice, and bring to a simmer.

Add the shrimp, parsley, red pepper flakes, salt, and rosemary. Stir to combine and cook until the shrimp are just starting to turn pink.

Transfer the shrimp mixture to a baking dish.

In a small bowl, mix the panko breadcrumbs, Parmesan cheese, and olive oil together. Sprinkle this mixture evenly over the shrimp.

Bake in the preheated oven for 15-20 minutes, or until the shrimp are fully cooked and the topping is golden brown.
