Take the lamb ribs out of the freezer and thaw them slowly in the refrigerator to preserve their properties.
Cut the potatoes into pieces about 1 centimeter thick, discarding the ends to ensure even cooking.
Peel and slice the onion.
Spread the cut potatoes evenly in a roasting pan.
Place the sliced onion on top of the potatoes.
Pour 4 ounces of white wine over the potatoes and onion.
Crush 2 garlic cloves and mix them with the wine, then blend until dissolved.
Make a cut inside the lamb ribs, about half a centimeter deep, to season them well.
Season the lamb ribs on both sides with salt, black pepper, and a little rosemary, massaging the seasonings into the meat.
Marinate the lamb ribs in the garlic and wine mixture for 30 minutes.
Season the potatoes with extra virgin olive oil, a pinch of rosemary, a sprinkle of pepper, and a little more salt.
Place the seasoned potatoes in the oven at 192°C (approximately 375°F) for 20 minutes.
After 15 minutes, flip the lamb ribs while the potatoes continue cooking.
Increase the oven temperature to 360°F (approximately 182°C) after the initial 20 minutes of cooking.
Remove the potatoes from the oven and prepare the lamb ribs for the next step.
Use toothpicks to secure the cut ends of the lamb ribs together and place them on top of the potatoes in the roasting pan.
Add some of the marinade juice over the potatoes.
Sprinkle parsley over the dish before placing it back in the oven.
