1

Set the oven to 350°F (175°C).

2

Grab a bowl and add both regular and golden raisins, then add hot water and set aside to plump them.

3

Use a hand mixer or stand mixer with the paddle attachment.

4

Add 3/4 cup (1.5 sticks) of unsalted butter at room temperature to the bowl.

5

Add 1 cup of lightly packed brown sugar and mix on medium speed until smooth and creamy, about 2 minutes.

6

Crack 1 egg into a small bowl, then add it to the creamed butter and sugar.

7

Add 1.5 teaspoons of vanilla extract and beat until incorporated.

8

In another bowl, combine 3/4 cup of all-purpose flour, 1/2 teaspoon of baking soda, 1/2 teaspoon of salt, 1/2 teaspoon of ground cinnamon, and 1/8 teaspoon of ground nutmeg. Whisk until well blended.

9

Add 3 cups of rolled oats to the dry ingredients and mix with a spatula.

10

Slowly add the dry ingredients to the wet mixture while the mixer is on.

11

Drain the raisins and gently press them to remove excess water, then add them to the cookie batter and stir with a spoon or spatula.

12

Drop cookie dough by 2 tablespoonfuls onto baking sheets, about 2 inches apart.

13

Wet the tips of your fingers with water and gently press the cookies down to about 1/2 inch thick.

14

If some cookies don't have raisins showing on top, add a few raisins from the bowl to the tops of the cookies.

15

Repeat with the rest of the dough, making about 16 cookies.

16

Bake in the oven for 10 to 14 minutes, until light golden brown around the edges and still soft in the center.

17

Allow cookies to cool on the baking sheets for about 10 minutes, then move to a cooling rack to cool completely.
