Measure 200 g of wheat flour into a mixing bowl.
Add 1 tablespoon of sugar to the flour.
Optionally add 1/2 teaspoon of cardamom for flavor.
Add 1/4 teaspoon of salt to the mixture.
Add 1/4 teaspoon of baking soda to the dry ingredients.
Melt 2 tablespoons of plant-based butter and add it to the dry ingredients.
Gradually add 4.5 deciliters of cold water while stirring to combine.
Mix until the batter is smooth and free of lumps.
Add 1/2 teaspoon of apple cider vinegar to the batter and mix well.
Refrigerate the batter for 10 to 15 minutes before frying.
Heat a pan over medium heat and add a little plant-based butter if needed.
Pour a small amount of batter into the pan, swirling to coat the bottom.
Cook until the edges are set and the bottom is golden, about 2-3 minutes.
Flip the pancake and cook the other side until golden, about 1-2 minutes.
Remove the pancake from the pan and repeat with the remaining batter.
Serve pancakes with raspberry jam, folding or rolling them as desired.
