Homemade Soft Pretzels

2 1/4 tsp of active dry yeast (1 packet) (10g)
5/8 to 7/8 cups of water (start with 5/8 = 1/4 plus 2 Tablespoons) (150ml)
2 1/2 cups of all purpose flour (320g)
2 Tablespoons to 1/4 cup of Sugar (for less sweet, use 2 Tablespoons) (30 to 60g)
6/8 tsp of salt, can use a full tsp (4g)
2 tsp of Canola Oil (10ml)
1/2 Cup of baking soda (90g)
4 Cups of Hot Water (1000ml)
Kosher Salt
1 Egg (optional)

In a bowl, combine the active dry yeast with warm water and let it sit until bubbly.

In a separate bowl, mix together the flour, sugar, and salt.

Add the yeast mixture and canola oil to the dry ingredients and mix until a dough forms.

Knead the dough on a floured surface until smooth, then let it rise until doubled in size.

Preheat the oven to 450 degrees F (232 C).

In a large pot, bring 4 cups of hot water to a boil and add the baking soda.

Divide the dough into pieces and shape each into a pretzel.

Boil each pretzel in the baking soda water for about 30 seconds, then remove and place on a baking sheet.

Sprinkle with kosher salt and bake in the preheated oven for about 12-15 minutes until golden brown.
