Homemade Soft Pretzels

1 packet (2 1/4 tsp) active dry yeast
4 cups all-purpose flour
1 1/2 cups warm water (110°F)
1/2 cup baking soda
Coarse sea salt (for sprinkling)
1 large egg (beaten)

Heat butter in a small pan over low heat until the milk solids turn dark amber color.

Let the butter cool completely before adding it to the rest of the dough ingredients.

Mix all ingredients in a bowl using a stand mixer or by hand.

Knead the dough for about 5 to 7 minutes until it becomes smooth and elastic.

Cover the bowl with plastic wrap and let the dough rise in a warm place for about an hour or until doubled in size.

Divide the risen dough into 12 to 15 equal portions (about 30g each).

Roll each portion into a ball and rest them under a clean kitchen towel for about 10 minutes.

Flatten each ball, then make a log by tucking and pinching.

Roll each log into a rope about 15 inches long, tapering each end slightly.

Make a U-shape with the rope and twist the ends twice before bringing them over to the bottom of the U.
