Homemade Soft Pretzels

2 and 1/4 tsp active dry yeast
6/8 tsp salt
1/2 cup white sugar
2 tsp canola oil
kosher salt (for topping)
1/2 cup baking soda
4 cups water (for baking soda bath)

Heat water to about 110 degrees in the microwave for about 30 seconds.

Add yeast and a pinch of sugar (about 1 tsp) to the heated water and stir with a whisk. Let it set for 5 to 10 minutes until foamy.

In a large bowl, combine the yeast mixture, canola oil, white sugar, and flour with salt. Whisk to combine.

Knead the dough on a floured surface, adding water if it gets too dry, until you have a nice dough.

Place the dough in a greased bowl, cover with a damp cloth, and let it rise for 1 to 1.5 hours in a warm place.

After rising, divide the dough into 6 equal parts.

Roll each piece of dough into a rope about 20 to 25 inches long, shape into a U, cross the ends, twist, and pinch to form a pretzel shape.

In a separate pot, heat 4 cups of water and mix in 1/2 cup of baking soda.

Dip each pretzel into the baking soda water for about 10 seconds, reshaping if necessary, and place on a baking sheet.

Optionally brush three pretzels with egg wash and sprinkle kosher salt on top.

Bake in the oven for 7 to 10 minutes until golden brown.
