Homemade Soft Pretzels

4 cups all-purpose flour
1 packet (2 1/4 tsp) active dry yeast
1 1/2 cups warm water (110°F)
1/4 cup granulated sugar
1 tsp salt
1/2 cup baking soda
1 large egg (beaten)
Coarse sea salt (for sprinkling)

Grab a portion of dough that has been previously measured out.

Put a little olive oil on a cutting board.

Start rolling the dough from the middle to the ends until it reaches about 25 to 30 inches in length.

If there are pieces that are bigger, roll those ones out.

Lift the ends of the dough to form a U shape.

Cross the ends about two and a half inches down, then cross them again.

Flip and press the ends into the bottom of the U shape.

Pick up the pretzel and reshape it onto a baking sheet.

If the dough keeps shrinking, let it rest for a second to allow the gluten to relax, then roll it again.

Repeat the process to form the U shape, cross the ends, and flip down with a half to three-quarters of an inch overhang.

Lift the pretzel and place it right side up in boiling water using a slotted spoon.

Carefully flip the pretzel over in the water after 30 seconds.

Remove the pretzel with the spoon and place it onto the baking sheet.

Sprinkle the pretzel with a little salt.

Let the pretzels rest for a minute before placing them in the oven.
