Ackee and Saltfish Pie
Cultural Context
Ackee and saltfish is Jamaica's national dish, rooted in the island's colonial history and African heritage. Traditionally enjoyed for breakfast or brunch, this dish combines the unique flavor of ackee fruit with salted cod, creating a savory and satisfying meal. The pie variation adds a delightful twist, making it suitable for gatherings and family meals. Today, ackee and saltfish is celebrated not just in Jamaica but also in Caribbean communities worldwide, showcasing the rich culinary tapestry of the region.

Preheat the oven to 250°F (121°C).
Poke holes in the pie crust to prevent puffing.
Bake the pie crust for 10 minutes in the preheated oven.
Fry the bacon in a pot until crispy, then remove it from the pot.
Soak the boneless saltfish for 30 minutes, then boil it in a pot.
Leave the pot open while boiling to prevent overflow.
Pour 3 tablespoons of olive oil into the pot.
Add half of the scotch bonnet pepper to the pot.
Make a roux by mixing 1 cup of flour with water until thickened.
Add the boiled saltfish to the pot and mix.
Break the fried bacon into pieces and add it to the mixture.
Add a teaspoon of black pepper to the mixture.
Gently mix in the ackee without breaking it.
Fill the baked pie crust with the ackee and saltfish mixture.
Place the pie in a baking tray to prevent breaking.
Preheat the oven to 350°F (177°C) and bake for 30 minutes.
