Canola oil is a healthier alternative with a similar flavor.
Start by preparing the ingredients for menudo.
Heat olive oil in a pan.
Add pork to the pan and brown it.
Remove the browned pork from the pan, allowing some oil to remain for flavor.
Add diced potatoes to the pan.
Add diced carrots and red bell pepper to the pan.
Sprinkle a little salt over the vegetables.
Remove the vegetables from the pan after they soften.
Add beef liver to the pan and sprinkle with salt.
Add chopped red onion to the pan.
Return the browned pork to the pan.
Add a little more salt and lots of pepper to the mixture.
Add chopped fresh tomatoes to the pan.
Sprinkle garlic powder over the mixture.
Pour in Nor liquid seasoning.
Add sugar to balance the acidity of the tomatoes.
Pour in water and bring to a boil until the pork is very tender.
Once the pork is tender, add the previously cooked carrots, potatoes, bell pepper, and green peas to the pot.
Let everything boil together until heated through.
