Pour 30 ml of milk into a small bowl and add 14 g of dried yeast, stirring to dissolve the yeast.
In a large mixing bowl, add 500 g of all-purpose flour and 160 g of castor sugar, stirring to mix them together.
Cut 250 g of butter into smaller cubes for easier mixing, then add it to the mixing bowl.
Add a pinch of salt to the mixing bowl.
Pour the yeast mixture into the mixing bowl along with 2 eggs and a bit of cinnamon to taste.
Knead the mixture until a dough forms that can be shaped into a ball, using a dough scraper to gather all the dough.
Cover the mixing bowl with plastic wrap or beeswax and let it rest for 1 hour.
In a saucepan, combine 300 g of syrup, 150 g of castor sugar, 115 g of butter, and 1 teaspoon of cinnamon, heating on medium until melted and combined.
Preheat the waffle iron on maximum heat and lightly oil it.
Weigh out 40 g portions of dough for each waffle and place them in the preheated waffle iron, cooking for about 2-3 minutes until golden brown.
Remove the waffle from the iron and quickly slice it in half with a sharp knife while still hot.
Spread a layer of syrup on one half of the waffle and place the other half on top, then let it cool on a wire rack.
