Dice about 1/4 cup of green onion and place it in a bowl.
Measure out 1 pound of grass-fed ground beef (93% fat recommended) and add it to the bowl.
Add a little bit of salt and pepper to the beef mixture.
Crack in 1 egg and mix the ingredients together using your hands for better tenderness.
Add 4 teaspoons of coconut flour to the mixture to absorb excess moisture.
Roll the mixture into meatballs using a cookie scoop and then shape them with your hands, placing them on a parchment-lined cookie sheet.
Bake the meatballs in the oven at 400°F for 16 to 18 minutes, ensuring not to overbake them.
Dice half of a small onion for the sauce.
In a large pot, combine the diced onion with 1 cup of grape juice, 1/2 cup of tomato sauce, and 2 tablespoons of tomato paste.
Add 2 tablespoons of apple cider vinegar, 3 chopped dates, Tabasco sauce, dry mustard, garlic salt, black pepper, and a pinch of ground allspice to the pot.
Bring the sauce to a boil over high heat for 1.5 minutes, then reduce to medium heat and simmer for about 7 to 8 minutes until it thickens.
Blend the sauce in a high-powered blender until smooth, or use a small food processor if needed.
Add the baked meatballs into the sauce and stir until they are well coated.
Serve the meatballs over cauliflower rice or regular rice, garnished with additional green onion.
