Spinach Rice, or Palak Rice, hails from India and is a vibrant dish that combines the earthy flavor of spinach with fragrant rice. This dish is often enjoyed as a wholesome meal, especially during the hot months when leafy greens are abundant. It's a staple in many households, celebrated for its nutritional benefits and ease of preparation. Today, variations can be found globally, with many adapting the recipe to include different spices or vegetables, making it a versatile favorite.

Kale is nutrient-rich, and frozen spinach is budget-friendly.
Boil a pot of water and add 250 ml cup of soaked whole grain basmati rice with a little salt.
Once cooked, strain the rice and keep it aside.
Wash and roughly chop 1 large bunch of fresh palak leaves.
In a mixer jar, add the palak leaves, 4 cloves of garlic, 1 piece of chopped ginger, and 2 green chillies; add a little water and grind to a fine paste.
In a kadai, heat 1 tablespoon of oil and 1 tablespoon of ghee.
Add 1 piece of cinnamon, a few cloves, 1 bay leaf, and 1/2 teaspoon of cumin seeds to the kadai.
Add 2 medium sized thinly sliced onions and sauté for about a minute.
After about 5 minutes of sautéing the onions, add 2 slit green chillies, 1/4 teaspoon of turmeric powder, 1 teaspoon of kashmiri red chilli powder, and 1 teaspoon of salt; mix well.
Cook the spinach paste until the raw smell goes and it thickens, about 10-15 minutes.
Add 1/2 teaspoon of garam masala powder to the mixture.
Gradually mix in the cooked basmati rice with the spinach masala carefully to avoid breaking the rice.
