Drain the coconut strings and set aside.
Separate the egg yolks from the egg whites.
In a bowl, combine glutinous rice flour, sugar, evaporated milk, egg yolks, and vanilla. Mix thoroughly, scraping the bottom until well blended.
Fold in the coconut strings.
Brush butter into your baking tin.
Pour the batter into the tin and cover with aluminum foil.
In a preheated oven, bake for 20 minutes at 180 degrees Celsius.
After 20 minutes, sprinkle grated cheese on top, remove the aluminum foil, and bake for another 30 minutes.
Gently brush with butter and bake for an additional 10 minutes.
Turn off the oven and let the bibingka set in the oven for 15 minutes.
