Boil 2 pounds of live lobsters in heavily salted water for about 8 to 12 minutes, stirring occasionally.
Once cooked, transfer lobsters to ice cold water to stop the cooking process.
Remove the lobster meat from the shell using a hammer, mallet, rolling pin, crab cracker, or kitchen scissors.
Cut down each side of the lobster tail if using lobster tails to extract the meat easily.
Cut the lobster meat into bite-sized chunks, ensuring no shell pieces remain.
For the mayo-based lobster roll, mix mayonnaise with lemon zest, lemon juice (about half a lemon), diced celery, fresh dill, parsley, and Old Bay seasoning in a bowl.
Add sweet pickle juice to the mayo mixture for sweetness, then fold in the lobster meat gently to avoid breaking it up.
Chill the lobster mixture in the fridge while preparing the buns.
For the Connecticut-style lobster roll, mince roasted garlic and melt 2 tablespoons of butter in a skillet.
Add minced roasted garlic and diced celery to the melted butter and cook for 1-2 minutes.
Add lobster meat to the butter mixture and toss to coat.
Toast the brioche hot dog buns in a skillet with butter until golden brown on both sides.
For plating, fill the Connecticut-style lobster roll with the lobster mixture and drizzle with more butter, then garnish with diced chives.
For the Maine-style lobster roll, load the bun with the mayo-based lobster mixture and garnish with diced chives.
