Break tofu skin into pieces about 10 cm long and soak in cold water to cover for 1 hour.

Boil water in a pot, add 0.5 tsp of salt, and once boiling, add the soaked tofu skin for 10-20 seconds until floating.

Add 0.5 tbsp of light soy sauce, 1 tsp of brown vinegar, 0.5 tsp of chili oil, minced spring onion, minced garlic, and a pinch of sugar to the pot.
