Braised Tofu in Soy Sauce / Dubu Jorim

Slice the tofu into 2.5cm or 1 inch thick and lightly season with salt. Set aside for 10 minutes.

Thinly slice the garlic and chop the green onion.

Remove the moisture from the tofu with paper towel. Add the potato starch powder in a plastic bag, and place 3 to 4 tofu slices in it. Shake the bag and coat the tofu with potato starch.

Heat the oil in a medium heat and fry the tofu coated in starch powder. The tofu sticks well to each other because of the starch powder so cook them with sufficient space among them.

Make the sauce by adding soy sauce, fish sauce, mirin, water and sugar in a small bowl.

Drain the oil from the pan and wipe it with a paper towel. Add oil to the pan and fry the sliced garlic over medium heat, until golden brown. Then add chopped bell pepper and stir fry for about 30 seconds. Add sauce to the pan and braise until thicken (until the sauce is reduced by 1/2 to 1/3). Place fried tofu in a pan and cook only one side of tofu in the sauce for about 30 seconds.

Turn off the heat. Transfer the tofu on the plate.
