Cut the flank steak into thin strips, not too thick or too thin, about 10 oz.
Rinse the beef with water to remove myoglobin for better cooking.
Chop half an onion and some green onions, keeping the onion quantity low to avoid excess water.
Prepare the marinade: mix 1 tsp baking soda, 1 tbsp cornstarch, 1 tbsp oyster sauce, 1 tbsp light soy sauce, 1 tsp dark soy sauce, 1/4 tsp white pepper, 2 tbsp water, 1 tsp cooking wine, and 1 tsp sugar.
Massage the marinade into the beef and let it sit to absorb the flavors.
Loosen fresh rice noodles and prepare them for stir-frying, ensuring they are not stuck together.
Heat the wok on high heat for about 1.5 minutes until it starts to smoke, then add 3 tbsp vegetable oil.
Add the marinated beef to the wok and cook for 40-60 seconds until mostly brown, then remove it from the wok.
Wipe down the wok and add a little more oil, then add the chopped onions and white parts of the green onions, cooking for 20-30 seconds until fragrant.
Add the loosened rice noodles to the wok and stir-fry for about 2 minutes until golden brown, taking care not to over-stir to prevent breaking.
Add the prepared sauce to the noodles and cook for another minute until well mixed.
Add the green onions and bean sprouts, cooking for 30-45 seconds before returning the beef to the wok.
Finish cooking everything together for another minute, then add 1 tsp sesame oil to finish.
