1

Remove the giblets from the turkey cavity and set aside, including the neck, heart, and gizzard (do not use the liver).

2

Dry brine the turkey by liberally seasoning it with kosher salt, getting it under the skin as much as possible.

3

Let the turkey sit uncovered in the fridge for 12 to 24 hours to dry brine.

4

Sprinkle about 1 teaspoon of baking powder over the turkey skin and rub it in to help crisp the skin.

5

After brining, season the turkey with 2 teaspoons of dried thyme, 2 teaspoons of dried sage, 1 teaspoon of garlic powder, and 1 teaspoon of black pepper.

6

Mix in about 2 tablespoons of oil (grapeseed or olive) into the seasoning mix and brush it all over the turkey, including under the skin and inside the cavity.

7

Let the turkey sit at room temperature for about 1 hour before cooking.

8

Preheat the oven to 500°F (260°C) and place a baking stone on the bottom rack.

9

Tuck the neck flap and wingtips under the turkey to prevent burning during roasting.

10

Place the turkey on a baking rack in a baking sheet to allow air circulation underneath.

11

Put the turkey in the oven at 500°F (260°C) and immediately turn the temperature down to 325°F (163°C).

12

While the turkey is cooking, prepare a fortified stock using the neck, gizzard, and heart for gravy.
