Lebanese Fatteh

Fatteh is a traditional Lebanese dish that showcases a delightful layering of flavors and textures. Originating from the Levant, it often combines crispy bread, chickpeas, and a creamy yogurt sauce, making it a popular choice for gatherings and celebrations. In Lebanon, it's common to serve Fatteh during special occasions, reflecting the country's rich culinary heritage. Today, variations of Fatteh can be found across the Middle East and beyond, with each region adding its unique twist to this beloved dish.

yogurt

pine nuts

chickpeas

Canned beans are more affordable and ready to use.
Soak chickpeas overnight.
Toast Pita bread in the oven until crisp and golden.
Peel soaked chickpeas using a rolling pin to roll them until the skins come off.
Put peeled chickpeas in a pot and add three times their volume in water.
Simmer chickpeas for about 45 minutes until soft and tender.
Mash garlic cloves with salt until a paste forms.
In a bowl, whisk yogurt and add garlic paste and two tablespoons of tahini, then mix well.
Pan fry pine nuts in a dab of butter until golden caramel colored.
Do the same with almonds until they are golden caramel colored.
Drain the nuts on paper towels and let them cool.
Crush Pita bread into croutons using a mallet.
Assemble the Fatteh by adding chickpeas with their broth, yogurt mixture, and garnishing with nuts.
