Cook potatoes in boiling water until tender, about 15-20 minutes.
Drain and mash the potatoes until smooth.
In a skillet, sauté chopped onion in olive oil until translucent, about 5 minutes.
Flake the cooked salmon into a large bowl.
Add the mashed potatoes, sautéed onion, chopped parsley, lemon juice, mustard, salt, and black pepper to the bowl.
Mix until well combined.
Form the mixture into patties, about 2-3 inches in diameter.
Coat each patty in bread crumbs, pressing lightly to adhere.
Heat olive oil in a skillet over medium heat until shimmering.
Cook the patties for 4-5 minutes on each side until golden brown.
Transfer the cooked patties to a paper towel-lined plate to drain excess oil.
Serve warm with a side of capers or a lemon wedge.
