Kofta patties have their roots in Middle Eastern cuisine, particularly popular in Turkey. Traditionally made with minced meat and a blend of spices, they are often served with fresh vegetables and yogurt. These patties are a staple in Turkish households and are enjoyed during gatherings and celebrations. Today, kofta has been embraced worldwide, with variations reflecting local flavors and ingredients.

Add 450 grams of lean ground beef to a bowl.
Dice half a large white onion.
Mince four garlic cloves.
Chop a little more than half a cup of parsley and add half cup to the mixture, setting the remainder aside for garnish.
To toast the spices, add half teaspoon cumin seeds, half teaspoon coriander seeds, and half teaspoon black peppercorns to a small frying pan over low heat.
Toast for 2 to 4 minutes, stirring often until fragrant.
Grind the spices to a powder in a mortar and pestle.
To the mixture, add the ground spices, half teaspoon dried thyme, half teaspoon of salt or to taste, half cup bread crumbs, and one egg.
Use your hands to mix well.
Cover and refrigerate for at least 30 minutes.
Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius).
Slice 300 grams of potatoes into equal pieces and add to a bowl.
Add half teaspoon dried thyme, half teaspoon dried oregano, half teaspoon dried rosemary, and salt and pepper to taste.
Add one tablespoon of olive oil and stir well.
Add to an oven-safe baking dish and roast in the oven for 30 to 40 minutes, stirring halfway through cooking.
Slice a quarter (200 grams) of grape tomatoes, slice two green onions, and one garlic clove.
Add a quarter teaspoon dried basil, quarter teaspoon dried oregano, and salt and pepper to taste.
Add one teaspoon of balsamic vinegar and one teaspoon of olive oil, then stir to combine.
To make the yogurt dip, add half cup of thick plain yogurt, half tablespoon lemon juice, and half teaspoon dried dill and mix well.
Form about two tablespoons of the mixture into patties.
Add olive oil to a pan over medium-high heat.
Add the patties and sear for one minute, then turn and sear for another minute.
Continue to turn the patties until they are cooked through, which takes about 5 minutes.
