1

Wash the potatoes well.

2

Make a small cut in the middle of the potatoes and transfer them into a pressure cooker.

3

Add 1/2 teaspoon of salt and 2 cups of water to the cooker.

4

Cover the lid and cook for three whistles on medium flame.

5

After half an hour, allow the cooker to cool down and then take out the potatoes.

6

Let the potatoes cool completely and then peel off the skin.

7

Grate all the boiled potatoes using a grater, ensuring they are completely cooled before grating.

8

In a mixing bowl, add 2 tablespoons of mint powder, 1 teaspoon of black salt, 1 teaspoon of roasted cumin powder, 1/2 teaspoon of asafoetida, 1 1/2 tablespoons of red chili powder, 1/2 teaspoon of turmeric powder, 1 tablespoon of coriander powder, and 1 1/2 tablespoons of dry mango powder.

9

Add salt as per requirement to the spice mixture.

10

Next, add 2 cups of gram flour and 1/2 cup of rice flour to the mixture.

11

Mix everything well without adding any water, as the boiled potatoes will help bind the dough.

12

Knead the mixture thoroughly until it forms a perfect dough.

13

Wash your hands and then add 2 tablespoons of oil to the dough and mix well to prevent sticking.

14

Grease the sev maker lightly with a few drops of oil to prevent sticking.

15

Fill the sev maker with the prepared dough.

16

Heat oil in a frying pan on low flame.

17

Fry the sev on medium heat, ensuring not to overcrowd the pan and fry in small batches.

18

Once golden and crisp, carefully take the sev out and remove excess oil.

19

Let the sev cool down completely before storing it in an airtight container.
