Deseed the 250g Mejdool dates and chop them.

Blend the chopped dates until there are no lumps, aiming for a texture that is not too much paste or coarse mashed.

Measure out 40g (1/4 cup) of almonds, 40g (1/4 cup) of cashews, and 25g (1/4 cup) of pistachios, and chop all the nuts.

Dry roast all the chopped nuts on low heat until they are slightly brown, then set them aside.

Dry roast 10g (1 1/2 tablespoons) of white sesame seeds (or poppy seeds) for a few minutes until they are slightly brown.

In a pan, heat 1 tablespoon of ghee over low heat.

Add the mashed dates to the pan and cook on low heat until they become soft and mushy, stirring occasionally.

Once the dates are soft, add the chopped nuts and 1/4 teaspoon of cardamom powder to the mixture and mix well.

Transfer the mixture to a piece of butter paper for easy rolling.

Once the mixture is slightly cool but warm to touch, shape it into a roll.

Place a few toasted sesame seeds on the surface and gently roll it tightly in the butter paper. Alternatively, use cling wrap.

Once cooled down, refrigerate the roll for 1-2 hours.
