1

Boil water with a little oil in it to prevent sticking.

2

Add 16 ounces of saltfish to the boiling water and let it boil for about 30 minutes, draining and replacing the water halfway to wash off excess salt.

3

After boiling, check the saltfish for tenderness using a fork, then drain it and let it cool slightly.

4

In a bowl, mix 1 teaspoon each of adobo seasoning, all-purpose seasoning, Italian seasoning, parsley flakes, black pepper, and salt.

5

Add half a teaspoon of the seasoning mix to the chopped onions and peppers in the skillet to flavor them as they cook.

6

Add the drained saltfish to the skillet, breaking it apart with a fork as you mix it in with the onions and peppers.

7

Pour in 1 cup of warm water to keep the saltfish moist, adding more if necessary.

8

Add half a can of tomato paste to the mixture, stirring to combine.

9

Add a chopped tomato to the skillet and mix well.

10

Pour water into the empty tomato paste can to rinse it, then add that water to the skillet for moisture.

11

Add half of a small container of ketchup to the mixture, adjusting for moisture and flavor as needed.
