Prepare the sweet pastry crust and blind bake until lightly golden.
Wash and slice the strawberries, then set aside.
In a saucepan, combine sugar, cornstarch, and salt.
Add milk and cook over medium heat, stirring until thickened.
Remove from heat and stir in egg yolks and vanilla extract.
Pour the mixture into the baked crust and let cool.
Arrange the sliced strawberries on top of the filling.
Dissolve gelatin in water and mix with lemon juice.
Pour the gelatin mixture over the strawberries to glaze them.
Chill the tart in the refrigerator until set, about 2 hours.
Serve with whipped cream on the side.
