Start by marinating the skirt steak with salt and black pepper for 10-15 minutes before cooking.
Bring the steak to room temperature for even cooking.
Heat olive oil in a skillet until smoking.
Crush garlic with the back of a knife and add it to the oil to perfume it.
Add the marinated steak to the hot skillet and cook, turning to get color on both sides.
Once the steak is colored, reduce the heat and add thyme and rosemary along with butter, rolling the steak in the flavored oil.
Let the steak rest in the pan with the herbs and butter while preparing the fries.
Peel the mouse Piper potatoes and cut them into thin strips using a peeler.
Blanch the potato strips in oil at 150°C (350°F) until they are half-cooked, then remove and let them rest.
Increase the oil temperature and fry the potatoes again until crispy and golden brown, about 2-3 minutes.
Remove the fries and drain on paper towels; season with salt and smoked paprika immediately.
For the peppercorn sauce, crush whole peppercorns and toast them in the skillet.
Add sliced shallots and grated garlic to the pan and caramelize them with the peppercorns.
Deglaze the pan with brandy and allow it to evaporate.
Add beef stock and reduce until caramelized, then stir in heavy cream to achieve a rich consistency.
Adjust seasoning of the sauce with salt and serve it over the sliced steak.
