The dish highlights the importance of beef in Haitian culture, where it is often paired with flavorful sides like vegetables and potatoes. While steak is beloved in Haiti, variations exist worldwide, with different marinades and cooking styles reflecting local tastes.

Season the filet mignon heavily with kosher salt at least 30 minutes to an hour before cooking.
Chop the russet potatoes roughly and rinse them in cold water until the water runs clear.
Boil the potatoes until fork tender.
Add AP seasoning to the steak, which includes garlic, onion powder, black pepper, and chili powder.
Heat a skillet over medium-high heat and add a couple tablespoons of avocado oil.
Once the skillet is smoking hot, add the seasoned filet mignon, laying it away from you and pressing down for maximum contact.
Sear the steak until a nice crust forms, then flip it over to sear the other side.
Sear the edges of the steak briefly for color, then transfer to a small baking sheet and finish in the oven at 400°F until desired doneness.
In the same skillet, add a couple tablespoons of butter and then the mushrooms to cook down and deglaze the skillet.
Add a sprig of rosemary to the mushrooms while they cook, then remove the rosemary once the mushrooms are golden brown.
Add chopped shallots to the skillet and cook for a minute, then add fresh garlic and cook until fragrant.
Add a little bit of Better Than Bouillon beef base for flavor, along with a teaspoon or two of Dijon mustard and tomato paste.
Add a teaspoon of soy sauce and a couple teaspoons of Worcestershire sauce, then deglaze the skillet with cognac and flambé to cook off the alcohol.
Once the alcohol has cooked off, mix in half a cup of beef broth and bring to a simmer.
Add a third cup of heavy cream and bring to a boil, then reduce to a simmer and season to taste with salt and pepper.
