Trim the silver skin and hard pieces of fat from the filet mignon steaks using a sharp knife.
Pour 2 tablespoons of olive oil over the steaks and season generously with coarse sea salt, ensuring all sides are seasoned.
Place the seasoned steaks in the refrigerator to marinate while preparing the mashed potatoes and red wine mushrooms.
Boil the potatoes for the creamy butter mashed potatoes recipe.
Preheat a large frying pan over medium heat and add 2 tablespoons of salted butter.
Slice 12 large white mushrooms into chunky slices and add them to the melted butter along with 1 large diced shallot.
Fry the mushrooms for about 6-7 minutes until browned, seasoning generously with salt.
Add 1 cup of red wine and 1 tablespoon of fresh thyme to the mushrooms and let simmer for 10-15 minutes until the wine reduces to a thick syrupy consistency.
Remove the red wine mushrooms from heat and keep warm.
Once the potatoes are cooked, mash them and mix in 1 cup of grated parmesan cheese, 1 teaspoon of garlic powder, and freshly chopped parsley while the potatoes are still hot.
Preheat the oven to 375 degrees Fahrenheit.
Pat the steaks dry with a paper towel to remove excess moisture for a better sear.
Preheat a frying pan over medium-high heat, using a stainless steel or cast iron pan for best results.
Add avocado oil to the hot pan and then add the steaks, browning them for a couple of minutes on each side and the edges.
Add 8-9 cloves of garlic, fresh thyme, a couple tablespoons of butter, a few dashes of worcestershire sauce, and a couple tablespoons of red wine to the pan with the steaks.
Transfer the pan to the oven and cook for about 3-3.5 minutes per side for medium rare; adjust time for desired doneness.
After 3 minutes, turn the steaks over and baste with the sauce, then return to the oven for another 3 minutes.
Let the steaks rest for at least 5 minutes after cooking, ideally transferring them to a tray to stop cooking further.
Plate the mashed potatoes and top with red wine mushrooms, garnishing with chopped parsley.
