1

Wash the red lentils a few times until the water runs clear. Soak for 2 to 3 hours, then drain and allow to sit in a strainer until all water is drained.

2

Toast the rolled oats in a pan over medium to medium-low heat for about 2 to 3 minutes until lightly browned and fragrant, then allow to cool.

3

Finely grate the carrots using the finer side of the grater. Chop the onion, ginger, garlic, and parsley.

4

Transfer the soaked red lentils to a food processor, add salt, paprika, ground cumin, coriander, cayenne pepper, garlic, ginger, onions, and parsley, and blend to a coarse mixture.

5

Transfer the lentil mixture to a large bowl. Add finely grated carrots, toasted rolled oats, chickpea flour, baking soda, olive oil, and white vinegar, and mix well. Cover and let rest for about 10 minutes (optional).

6

Scoop the lentil mixture using a 1/4 cup and form equal-sized patties, about 1/2 inch thick.

7

Heat 2 to 3 tablespoons of oil in a pan and add the lentil patties 3 to 4 at a time. Fry on medium heat for about 30 seconds, then reduce heat to medium-low and cook for 2 to 3 minutes until the bottom is golden brown. Flip and cook for another 3 minutes on medium-low heat, then increase heat to medium and fry for about 20 to 30 seconds to get a golden brown crust.

8

Remove the patties from the pan to a plate lined with paper towel to soak up excess oil.
