Option 1: Soak lentils in boiling water overnight. Option 2: Boil lentils in a pot covered with an inch of water until soft (about 30 minutes). Drain and let cool.

Process lentils in a food processor until a paste forms. Transfer to a large mixing bowl.

Grate onion and zucchini (using a grater or food processor). Add to lentil paste. Mince garlic and chop parsley, then add to the mixture and combine.

Add quick oats, almond flour, black pepper, cumin, salt, baking powder, and water. Mix with hands. Add eggs and olive oil, combine again. Let rest for 5 minutes.

Shape lentil mixture into patties (about 1/2 inch thick). Fry in a non-stick pan with olive oil on medium-high heat until golden on both sides, or bake at 350°F for 15 minutes, flip, and bake for another 15 minutes.
