Cut 6 bread slices into rough pieces and grind them in a mixer jar to a coarse powder.
Transfer the ground bread to a bowl and set aside.
Chop 5 ripe bananas and grind them into a smooth pulp in the mixer jar.
Transfer the banana pulp to a bowl and add 50 g of unsalted butter, 1/2 cup of brown sugar, 1/2 cup of white granulated sugar, 1 tsp of cinnamon powder, and 1/4 tsp of dry ginger powder.
Combine everything well and add 1 tsp of vanilla essence (optional).
Add the crumbled bread to the banana mixture and mix thoroughly.
Heat a heavy bottom pan and transfer the banana bread mixture into the pan, stirring continuously.
As the halwa thickens, reduce the flame to low and add 1/4 cup of ghee, stirring until fully absorbed.
After 2 minutes, add a handful of melon seeds (or roasted cashews) and mix well.
Turn off the flame when the halwa reaches the desired consistency.
