  • 1 cup chicken broth
  • 1 cup sour cream
  • 2 tbsp all-purpose flour
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups egg noodles, cooked
  • Fresh parsley, chopped (for garnish)

Instructions

  1. 1Heat olive oil in a large skillet over medium heat.
  2. 2Add chopped onion and garlic, sauté until onion is translucent.
  3. 3Add chicken strips to the skillet, cooking until browned on all sides.
  4. 4Stir in sliced mushrooms and cook until they are tender.
  5. 5Sprinkle flour over the chicken and mushrooms, stirring to combine.
  6. 6Gradually add chicken broth, stirring constantly until the mixture thickens.
  7. 7Reduce heat to low and stir in sour cream, paprika, salt, and pepper.
  8. 8Simmer for 5 minutes, allowing flavors to meld.
  9. 9Serve the chicken stroganoff over cooked egg noodles.
  10. 10Garnish with fresh parsley before serving.

  • 2 lbs beef chuck roast
  • 1 cup salsa verde
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced

Instructions

  1. 1Preheat your oven to 300°F (150°C).
  2. 2In a large oven-safe pot, heat a little oil over medium-high heat.
  3. 3Season the beef chuck roast with salt, pepper, cumin, and chili powder.
  4. 4Sear the beef on all sides until browned, about 3-4 minutes per side.
  5. 5Remove the beef from the pot and set aside.
  6. 6In the same pot, add the chopped onion and garlic, sautéing until softened, about 3-5 minutes.
  7. 7Return the beef to the pot and pour the salsa verde over it.
  8. 8Cover the pot with a lid and place it in the preheated oven.
  9. 9Cook for 3-4 hours, or until the beef is tender and easily shredded with a fork.
  10. 10Once cooked, remove the beef from the pot and shred it with two forks.
  11. 11Mix the shredded beef with the cooking juices, lime juice, and chopped cilantro before serving.
