1/3 cup Cashew nuts
1/4 cup Chicken Stock

1 tbsp Olive Oil
1 chopped Shallot
1/2 cup Wine
1 tsp Thyme
Pinch of grated Nutmeg
2 tbsp Worcester sauce
Freshly chopped Parsley

Season 300 grams of Chicken Breast with Salt and Pepper.

Heat 1 tbsp of Olive Oil in a large skillet.

Add 1 minced Garlic and heat for about 30 seconds.

Add the strips of Chicken and cook until browned.

While the Chicken is cooking, prepare Cashew Cream by blending 1/3 cup of soaked Cashew nuts with 1/4 cup of Chicken Stock until smooth.

Slice up the Mushrooms.

Once the Chicken is cooked, place it on a separate plate to rest.

In the same pan, heat another tbsp of Olive Oil.

Add 1 chopped Shallot and let it caramelize.

Add the remaining minced Garlic and cook for about 30 seconds until fragrant.

Add the Mushrooms, toss to coat, and turn up the heat to sweat them.

Remove the pan from heat and add 1/2 cup of Wine, then return to heat and let it reduce by half.

Add the rest of the Chicken Stock and let it reduce.

Stir in 1 tsp of Thyme and a pinch of grated Nutmeg, then add 2 tbsp of Worcester sauce.

Stir everything together and add the Chicken back to the pan.

Add the Cashew Cream and let it simmer for about a couple of minutes.

Season with a bit of Salt to taste.

Garnish with freshly chopped Parsley before serving.
