Chicken Biryani

3 kg basmati rice
8-10 tsp salt (for boiling rice)

Wash 3 kg chicken thoroughly.

Marinate chicken with 1 tbsp salt, 0.5 tsp turmeric powder, 2 tbsp Kashmiri red chili powder, 2 tbsp ginger-garlic paste, chopped cilantro, 1 tsp biryani masala, and 300 g yogurt for at least 15 minutes.

Chop mint and add to the chicken marinade along with some fried onions.

In a large pot, heat 100 ml oil and add whole spices: 2 bay leaves, 4-5 black cardamom, 8-10 green cardamom, javitri, 5-6 cinnamon sticks, and 8-10 cloves.

Once the spices are fragrant, add sliced onions and cook on high heat until golden brown, stirring continuously.

Reduce heat to medium and add 1 tbsp ginger-garlic paste; cook for 2-3 minutes.

Add the marinated chicken to the pot and mix well, cooking on high heat for 2 minutes, then reduce to medium heat for 4-5 minutes until chicken is cooked and oil separates.

Add water to the pot, mix well, and cook on medium heat for 5-6 minutes.

Add chopped mint, green chilies, and some chopped cilantro to the chicken mixture.

After 15 minutes of cooking, add 1 tsp biryani masala and 2-3 tbsp cream (optional) to the chicken and mix well.

In a separate pot, boil water and add whole spices for the rice: black cardamom, green cardamom, javitri, cinnamon, and cloves.

Add 8-10 tsp salt to the boiling water and 3 kg of washed basmati rice, cooking for 5 minutes.

After 5 minutes, add some chopped cilantro, fried onions, and mint to the rice, then drain the rice.

Layer the boiled rice over the chicken mixture in the pot, ensuring even coverage.

Cover the pot tightly and cook on high heat for 2 minutes, then reduce to medium heat for 6 minutes.

After 8 minutes total, turn off the heat and let the biryani rest without lifting the lid.
