Prepare the dipping sauce by combining 10 tablespoons of water, 3 tablespoons of brown rice vinegar, 3 tablespoons of fish sauce, a pinch of chili, 2 tablespoons of sugar, 2 tablespoons of grated carrots, and 1 clove of minced garlic in a bowl. Mix well and set aside.
Fill a pot with boiling water and add 100 g of rice vermicelli. Cook for 5 minutes, then drain and mix with a tablespoon of rice vinegar to season.
Soak a rice paper wrapper in warm water for about 20-30 seconds until pliable, then place it on a damp surface.
Layer the filling on the rice paper: add 4-6 shrimp, a bit of lettuce, some mung bean sprouts, seasoned rice vermicelli, grated carrots, fresh coriander, mint leaves, and radish slices.
Fold the sides of the rice paper over the filling, then roll tightly from the bottom to the top, ensuring to squeeze tightly without tearing the paper.
Repeat the rolling process with the remaining ingredients and wrappers.
Serve the spring rolls with the prepared dipping sauce.
