In modern cuisine, these rolls have gained international popularity, with variations appearing in many countries, often filled with different proteins or vegetables to suit local tastes.

Melt a knob of butter with 2 tablespoons of olive oil in a pan.
Add 1 teaspoon of miso broth, or any chicken or fish broth.
Add a red chili, turmeric, fresh ginger, and 1 clove of garlic, all finely chopped.
Sauté for 1 minute while stirring with a wooden spoon.
Season with 1 teaspoon of curry, a pinch of piment d'espelette, and salt.
Add the seafood and diced mushrooms, continue stirring and let simmer for 2 minutes.
Pour in 1 tablespoon of sweet sauce made from molasses and soy sauce.
Cook for another minute.
Add 100 g of pre-cooked rice noodles that were boiled in salted water for 4 minutes, drain and cut with scissors.
Mix in the noodles with the filling and add the juice of 1 lemon for freshness.
Stop the cooking, grate a carrot and mix everything with two forks to combine well.
Steam the cabbage leaves for 2 minutes, then remove the middle stem to make rolling easier.
Pour boiling water into a large dish to soak the rice paper wrappers.
Dip the rice paper in the boiling water for a quick dip, just an 'aller et retour' (back and forth).
Place the rice paper on a clean towel, and on one end, place a steamed cabbage leaf.
Add a generous spoonful of the seafood filling on top of the cabbage leaf.
Fold the sides of the rice paper over the filling, keeping it parallel, then roll tightly to form the spring roll.
Repeat the process with remaining ingredients and wrappers.
Optionally, brush with olive oil and bake in the oven to lightly color them.
Serve with a classic Vietnamese dipping sauce like nuoc mam.
