Reduce heat and simmer for 1.5 to 2 hours, until beef is tender.
Adjust seasoning with salt, black pepper, and lime juice to taste.
In a separate pan, fry sliced potatoes until golden and crispy, about 5-7 minutes.
Serve the stew hot, garnished with fried potatoes on top.
