1 lb salmon
1 tbsp blackened seasoning
2 cloves roasted garlic, minced
1 tbsp Tony's seasoning
1 tsp smoked paprika
1/2 cup buttermilk
1/2 cup flour
1/4 cup cornstarch
1/4 cup cooking oil
1 tbsp chili paste
2 tbsp honey
1/4 cup orange juice
4 brioche buns
2 tbsp truff spicy mayo
1 cup arugula
1 cup heirloom grape tomatoes, halved

Remove the skin from the salmon and set it aside.

Wash the salmon and cut it into bite-sized pieces suitable for sliders.

Season the salmon with blackened seasoning, roasted garlic, Tony's seasoning, and smoked paprika, rubbing it in well.
