1 cup hot water

Wash the chicken thoroughly in 2-3 changes of water and cut into medium-sized pieces.

Add 1 teaspoon salt, a little turmeric powder, 1/2 teaspoon red chili powder, and 1/2 teaspoon ginger-garlic paste to the chicken and mix well.

Heat 2-3 tablespoons of vegetable oil in a non-stick kadhai.

Add the chicken to the hot oil and shallow fry on high flame until the color changes, about 4-5 minutes.

Remove the chicken from the kadhai and set aside, allowing the oil to remain.

In the same kadhai, add 1 teaspoon cumin seeds and let them splutter.

Add the finely chopped onion and sauté until light golden brown.

Add 1-1.5 tablespoons of ginger-garlic paste and cook well.

Add 1 teaspoon turmeric powder, 1 teaspoon red chili powder, and 1/2 teaspoon spicy red chili powder, and sauté on low flame to avoid burning the spices.

Add chopped tomatoes and 1 teaspoon salt, 2 teaspoons coriander powder, and 1 teaspoon cumin powder, and cook until the tomatoes are soft and oil separates, stirring occasionally.

Add the fried chicken back into the kadhai and mix well with the spices.

Add 1 cup of hot water and mix everything together.

Cover and cook on medium flame for 10-15 minutes, stirring occasionally.

After cooking, add 1 teaspoon dried fenugreek leaves and 1 teaspoon garam masala, and mix well.

Cook for an additional 3-4 minutes on low flame, ensuring the chicken is tender and the gravy is smooth.

Garnish with fresh coriander before serving.
