TURKMEN SOMSA

In a large bowl, combine the flour and salt. Gradually add water and vegetable oil, mixing until a dough forms.

Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

In a skillet, heat a little oil over medium heat. Add the chopped onion and sauté until translucent.

Add the ground meat to the skillet and cook until browned. Stir in cumin, black pepper, paprika, and cayenne pepper. Remove from heat and let cool.

Preheat the oven to 375°F (190°C).

Divide the dough into small balls (about the size of a golf ball). Roll each ball into a thin circle on a floured surface.

Place a spoonful of the meat mixture in the center of each circle. Fold the dough over to create a half-moon shape and pinch the edges to seal.

Place the filled somsa on a baking sheet lined with parchment paper. Beat the egg and brush it over the tops of the somsa for a golden finish.

Bake in the preheated oven for 25-30 minutes or until golden brown.

Remove from the oven and let cool slightly before serving.
