Add 7 g of brown sugar to 225 mL of lukewarm milk and stir until dissolved.
Add 5 g of instant yeast to the milk mixture and let it sit until it bubbles, about 5 minutes.
Create a well in 225 g of all-purpose flour and sprinkle 1.5 g of salt on the outer edge.
Add 1 egg yolk and 10 g of softened butter to the well in the flour.
Pour the yeast mixture into the well, avoiding contact with the salt, and stir until there are no lumps.
Cover the bowl with a damp towel and let the batter rise in a warm place for 1 hour.
Peel, core, and cut 4 Granny Smith apples into 1 cm slices.
Mix 50 g of sugar and 1 tbsp of ground cinnamon in a shallow dish.
Dip the apple slices into the cinnamon sugar mixture.
Thin out the batter with a little milk if necessary.
Preheat oil in a deep fryer to 350°F (180°C).
Dip the cinnamon sugar-covered apple slices into the batter, letting excess drip off, and fry in the hot oil for 3 to 5 minutes, turning halfway through.
Remove the fried apple flopper and place it on a rack with paper towels to drain excess oil.
Serve hot, optionally dusting with powdered sugar or cinnamon sugar.
