Preheat the oven to 400°F.
Thaw two sheets of puff pastry.
Dice about four medium apples to make two cups of diced apples.
Melt 1 tablespoon of butter in a large skillet over medium heat.
Add the diced apples to the skillet and stir to coat them in butter.
Cook the apples for a few minutes until they start to soften and release juice.
Add 1 pinch of salt, 1 tablespoon of lemon juice, and 1/2 teaspoon of cinnamon to the apples.
Stir in 1/4 cup of packed brown sugar and mix well.
If there is excess juice, sprinkle in cornstarch to thicken it, if desired.
Remove the skillet from heat and let the apple mixture cool in the fridge.
Roll out the puff pastry on a lightly floured surface to a 12 by 12 inch square.
Cut the rolled pastry into four 6-inch squares.
Place the squares on a baking sheet lined with parchment paper.
Crack 1 egg into a bowl, add 1 tablespoon of cream, and mix to create an egg wash.
Assemble the turnovers by placing a few tablespoons of filling on one side of each pastry square, leaving a half inch border.
Brush the edges of the pastry with egg wash to seal.
Fold the pastry over to form a triangle and crimp the edges with a fork to seal.
Repeat the assembly for the remaining squares and place them on the baking sheet.
Bake in the preheated oven until golden brown.
