Mix smoked paprika, cumin, brown sugar, black pepper, and salt in a bowl.
Rub the spice mixture over the beef and pork shoulders.
Place the meat in the pot; sear on all sides until browned, about 3-4 minutes per side.
Pour in chicken broth and apple cider vinegar; add bay leaves.
Cover and cook on low heat for 6-8 hours, until meat is tender and easily shredded.
Remove the meat from the pot; let it rest for 10 minutes.
Shred the meat using two forks, discarding any excess fat.
Return the shredded meat to the pot; mix with barbecue sauce.
Cook for an additional 30 minutes on low heat, stirring occasionally.
Serve hot on buns or with sides of your choice.
