Cook egg noodles in a large pot of boiling water according to package instructions until al dente, about 4 minutes. Drain and set aside.

Heat 2 tablespoons of vegetable oil in a pan over high heat, add marinated chicken pieces, and cook for 2 minutes on one side, flip, and cook for another 1 minute and 30 seconds, then stir for 30 seconds. Remove chicken, leaving oil in the pan.

Add chicken and shrimp back into the pan, stir for 1 minute, then add green leaves of bok choy and garlic chives, stir for another 30 seconds, and turn off the heat.
