In a mixing bowl, add 2 cups of all-purpose flour (250 grams).
Add 1/2 cup of semolina and mix well.
Stir in 3/4 cup of powdered sugar and a pinch of salt.
Add 3 tablespoons of melted ghee and 2 tablespoons of oil to the mixture.
Add cardamom powder and chopped dry fruits and nuts for flavor.
Gradually add warm milk, mixing slowly to avoid making the dough too loose.
Knead the dough for about 3-4 minutes until it is medium soft, not too hard or too soft.
Cover the dough and let it rest for 15-20 minutes.
After resting, check the dough; it should be firmer as the semolina absorbs moisture.
Knead the dough again to make it smooth.
Divide the dough into small portions and roll them into balls.
Roll each ball into discs of medium thickness, ensuring they are not too thick or too thin.
Use a fork or knife to create impressions on the discs to prevent them from puffing up while frying.
Cut the discs into desired shapes using a steel glass or any cutter.
Heat oil in a frying pan over medium heat until hot.
Fry the discs in batches, flipping them gently after a few seconds to ensure even cooking.
Cook until they turn a dark brown color, maintaining a low flame for crispiness.
Once done, drain the excess oil and let them cool in an open container to avoid sogginess.
