Preheat the waffle iron according to the manufacturer's instructions.
In a mixing bowl, combine the flour, sugar, baking powder, and salt.
In another bowl, whisk together the eggs, milk, melted butter, and vanilla extract.
Dissolve the yeast in warm water and let it sit until frothy, about 5 minutes.
Add the yeast mixture to the wet ingredients and mix until combined.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Let the batter rest for about 30 minutes to allow it to rise slightly.
Grease the waffle iron lightly with butter or oil.
Pour the batter into the preheated waffle iron, spreading it evenly.
Close the waffle iron and cook until golden brown, about 4-5 minutes.
Carefully remove the waffle and repeat with remaining batter.
Serve warm, dusted with powdered sugar, and topped with whipped cream and fresh fruit.
