Cut 1/2 onion into large strips and separate the onion pieces.

Cut 4 green onions in half lengthwise, then cut the white part into 2-inch sections and the green part into 2-inch sections, keeping them separate.

Wash and drain bean sprouts thoroughly.

Cut the beef into thin slices, perpendicular to the muscle fibers.

Marinate the beef with dark soy sauce, soy sauce, oyster sauce, sugar, baking soda, cornstarch, and a little bit of water. Mix evenly and add a little oil.

Prepare the cooking sauce for the noodles by mixing dark soy sauce, soy sauce, and sugar.

Add fresh chami noodles to boiling water, or if using spaghetti, use half the amount by weight. Follow package instructions for cooking.

Once the noodles are ready, drain them and mix a little oil into them to prevent sticking.

Preheat a pan over medium-high heat and add some oil.

Add dark soy sauce for seasoning and color, then add water. Once the water thickens and incorporates into the beef, remove the beef from the pan.

Add more oil back to the pan and pan-fry the noodles, spreading them out and letting them fry for about a minute before tossing them around for another minute.

Add half of the prepared sauce to the noodles, mix well, then add broth or water to braise the noodles. Cover the pan and let them braise until they soak up most of the liquid, stirring occasionally.

Once the noodles have soaked up the liquid, add all the prepared ingredients back to the pan and toss to mix everything together.
