Turkish Meatballs

1 kg. (2 pounds) ground beef (not lean)
4 cups fresh bread crumbs
1 large onion
2 large eggs
1 cup fresh parsley leaves
2 1/2 tbsp KOFTE BAHARI
1/2 tbsp salt
1/2 tsp ground cumin
1/2 tsp ground black pepper
1/3 cup sunflower oil

Combine 4 cups bread crumbs, 2 1/2 tbsp meatball spice blend, 1/2 tbsp salt, 1/2 tsp cumin and black pepper, mix then set aside.

Grate the onion into a large bowl.

Add the chopped parsley, ground beef and 2 eggs.

Knead for about 2-3 minutes, until well combined.

Add the bread crumb mixture and knead for about 4-5 minutes.

Add the oil and knead for another 2-3 minutes.

Form the whole mixture into a ball, grab with your hands and throw it into the bowl from above. Repeat this process 5-6 times then knead for another 2-3 minutes.

Wet your hands with some water and form the mixture into desired shape, preferably flattened meatballs or patties.

Place the prepared patties on a parchment paper lined tray.

Repeat with remaining mixture and freeze them between layers of parchment paper.

Pack the frozen koftas into freezer bags and keep them in the freezer until needed.
