The most important thing is the rice; use arborio risotto rice for its high starch content.

You will need 120 grams of arborio risotto rice; do not wash it to retain the starch.

For flavor, use two halves of a dried vanilla pod; crush it into a powder using a pestle and mortar.

Measure out 60 grams of unsalted butter and place a large pot on medium to high heat.

Melt the butter fully in the pot.

Once melted, add the dried vanilla powder to the butter and stir.

Pour in the rice and let it sauté for a couple of seconds to slightly roast it.

Measure out 120 grams of double cream, 200 grams of full fat milk, 5 grams of sea salt, and 60 grams of light muscovado sugar.

Pour all the measured ingredients into the pot once it comes to a boil.

Turn the heat down to let it simmer and set a timer for 15 minutes; no need to stir during this time.

After 15 minutes, check the rice; it should be al dente.

Set the timer for another 15 minutes, stirring occasionally this time to thicken the liquid.

After the second 15 minutes, check the rice pudding; it should be starting to appear on the top of the liquid.

Cook for an additional 5 minutes to achieve the desired consistency, where it coats the spoon.

Remove from heat and set aside while measuring the final ingredient.

Measure out 60 grams of high-quality white chocolate and fold it gently into the rice pudding.

Check the temperature; it should be around 67 degrees Celsius for serving.

Slice a banana and dip it in demerara sugar on one side.

Torch the tops of the sugar-dipped bananas.

Dish out the rice pudding and place the caramelized bananas on top.
